It's easy (if you're comfortable making a roux).
And comforting.
And kids are pretty much in love with it.
I can have it all together and out of the oven in 45 minutes, even with a whiny baby tugging on my pants the whole time.
I use the classic recipe that is very basic.

Now if only I could get a sweet dutch oven or two.
I was only able to get these photos of Marin because she got her belly so full she could barely move.
